Pollo Asado
- 1 whole chicken
- 1 tablespoon salt
- 2 teaspoons pepper
- 2 teaspoons Smoked paprika
- 1 teaspoon garlic powder
- 1 tablespoon Canola oil
- 2 ripe large tomatoes
- 2 tablespoons queso fresco
- 1 tablespoon olive oil
- 1 teaspoon salt
- 4 Poblano peppers or similar
- 4 corn tortillas
- 1 lime
- 1 cup greens
- Clean chicken and butterfly it in half (cut lengthwise not all the way through).
- Mix salt, pepper, paprika, garlic powder and oil and create a rub. Rub the chicken with the mixture.
- Prepare grill for direct heat over medium hight heat. Place chicken breast side down and cook for 6 minutes. Turn over and do the same.
- Change chicken to indirect heat and cook chick3n 35-40 minutes or until reaches 165 degrees.
- Chard peppers. Slices tomatoes, place greens and drizzle olive oil, queso fresco, salt, lime.
- Warm tortillas and enjoy!
