Sesame Shrimp
- 1/4 c. reduced-calorie Russian salad dressing
- 2 Tbsp. reduced-sodium soy sauce
- 1 Tbsp. lemon juice
- 1/4 tsp. garlic powder
- 1 (12 oz.) pkg. frozen, cooked shrimp, thawed
- 1 small onion, chopped
- 1 medium green pepper, chopped
- 2 small zucchini, sliced
- 1 Tbsp. sesame seed
- Combine dressing, soy sauce, lemon juice and garlic powder in mixing bowl.
- Add shrimp, stirring to coat.
- Set aside.
- In medium skillet, heat about 1/2 cup water to boiling over medium-high heat.
- Add vegetables.
- Cover and steam for 3 minutes. Add shrimp.
- Reduce heat to medium.
- Cook, uncovered, 3 to 5 minutes, until shrimp are warm and vegetables are crisp-tender. Drain off any excess water.
- Top with sesame seed.
- Serves 4.
