Every Day Lunch Wrap

  1. Lay the flatbread or tortilla flat and spread thinly with hummus. Leave a border around the edge so it doesn't squish all over the place.
  2. Toss spinach, cabbage and feta cheese together with olive oil and lemon juice. Salt and pepper to taste. Pile greens on the center of the tortilla. Place the artichoke hearts, capers and olives on top of the greens. Finish with a sprinkling of citrus zest. Wrap up tortilla, cut in half, and either serve immediately or encase it in waxed paper or plastic wrap and pack it in your lunch box.
