Boston Bean Salad(Perfect For A Potluck)
- 1 (15 oz.) can navy beans, drained and rinsed
- 1 (15 oz.) can red beans, drained and rinsed
- 1 (15 oz.) can black beans, drained and rinsed
- 1 c. (2 stalks) sliced celery
- 1/2 c. thinly sliced green onion
- 1/2 c. vinegar
- 1/4 c. molasses
- 1/4 c. salad oil
- 1 Tbsp. Dijon mustard
- 1/4 tsp. white pepper
- lettuce leaves
- 2 c. torn curly endive
- 2 slices crisp bacon, cooked, drained and crumbled
- In a large bowl combine beans, celery and green onion.
- For dressing in a screw-top jar combine vinegar, molasses, oil, mustard and pepper.
- Cover and shake well to mix.
- Pour dressing over bean mixture.
- Stir to coat.
- Cover and chill 4 to 24 hours stirring occasionally.
