Italian Chicken Skillet

  1. In 10-inch skillet, cook celery, green pepper, onion and garlic in hot oil until tender.
  2. Stir in undrained tomatoes, chicken, beans, uncooked rice, undrained mushrooms, Italian seasoning, 1/2 teaspoon of salt and 1/8 teaspoon of pepper.
  3. Bring to a boil, reduce heat, cover and simmer 10 minutes or until beans and rice are done.
  4. Sprinkle cheese on top.
  5. Cover; cook 2 minutes more or until cheese is melted.
  6. Serve immediately.
  7. Serves 4.
