Italian Chicken Skillet
- 1/2 c. chopped celery
- 1/4 c. chopped onion
- 2 Tbsp. cooking oil
- 1 1/2 c. chopped, cooked chicken
- 1 (2 oz.) jar sliced mushrooms
- 1/2 c. shredded Mozzarella cheese
- 1/4 c. chopped green pepper
- 1 clove garlic, minced
- 1 (16 oz.) can stewed tomatoes
- 2/3 c. quick cooking rice
- 1 1/2 tsp. Italian seasoning
- 1 (9 oz.) pkg. frozen Italian green beans
- In 10-inch skillet, cook celery, green pepper, onion and garlic in hot oil until tender.
- Stir in undrained tomatoes, chicken, beans, uncooked rice, undrained mushrooms, Italian seasoning, 1/2 teaspoon of salt and 1/8 teaspoon of pepper.
- Bring to a boil, reduce heat, cover and simmer 10 minutes or until beans and rice are done.
- Sprinkle cheese on top.
- Cover; cook 2 minutes more or until cheese is melted.
- Serve immediately.
- Serves 4.
