Carolina Pulled Barbecue Pork
- 2 onions, quartered
- 2 Tbsp. brown sugar
- 1 Tbsp. paprika
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 (4 to 6 lb.) boneless pork roast
- 3/4 c. cider vinegar
- 4 tsp. Worcestershire sauce
- 1 1/2 tsp. crushed red pepper flakes
- 1 1/2 tsp. sugar
- 1/2 tsp. dry mustard
- 1/2 tsp. garlic salt
- 1/4 tsp. cayenne
- Place onions in heavy Dutch oven cooker. Combine brown sugar, paprika, salt and pepper. Rub on roast. Place roast over onions. Combine vinegar, Worcestershire sauce, red pepper flakes, sugar, mustard, garlic salt and cayenne. Stir to mix well. Drizzle 1/3 of vinegar mixture over roast. Set remaining aside. Cover. Cook at 375u0b0 for 5 to 6 hours. Occasionally check on roast and pull meat away with a fork. Drizzle remaining vinegar mixture over roast during last 1/2 hour of cooking. Serve meat alone or on buns. Tastes really great with coleslaw.
