Pumpkin Delight Cake
- 1 c. rolled oats
- 2 c. whole wheat pastry flour
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. ground ginger
- 1/2 c. chopped dates
- 1/4 tsp. ground nutmeg
- 1 (16 oz.) can pumpkin puree
- 1/4 tsp. ground allspice
- 1 c. honey
- 1 c. unsweetened applesauce
- 2 tsp. cream of tartar
- 2 egg whites (unbeaten)
- 1 c. raisins
- 1/4 tsp. ground cloves
- 1/2 c. chopped dates
- Preheat oven to 325u0b0.
- In large mixing bowl, combine oats, flour, baking soda, cream of tartar, cinnamon, ginger, cloves, nutmeg and allspice.
- In medium bowl, mix honey, applesauce, pumpkin puree and 2 unbeaten egg whites.
- Gently stir into flour mixture and mix until just blended.
- Stir in raisins and dates. Gently stir in 2 lightly beaten egg whites.
- Do not overmix.
