Zucchini Bread

  1. Sift dry ingredients; set aside.
  2. Blend eggs, oil and sugars. Add dry ingredients; mix lightly until well blended.
  3. Add zucchini, bananas, nuts and vanilla; mix well.
  4. Spread into 2 greased loaf pans (9 x 5 x 3-inch) and bake for 1 hour and 15 minutes, or 3 greased loaf pans (7 7/8 x 3 7/8 x 2 1/2-inch) for 1 hour.
  5. Bake at 350u0b0 (or 325u0b0 if glass pans).
