Zucchini Bread
- 2 1/2 c. flour, sifted
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 2 tsp. cinnamon
- 1 tsp. nutmeg
- 2 bananas, mashed
- 3 tsp. vanilla
- 3 beaten eggs
- 1 c. oil
- 1 c. brown sugar
- 1 c. white sugar
- 2 c. zucchini, grated (do not peel)
- 1 c. chopped nuts or raisins or part of both
- Sift dry ingredients; set aside.
- Blend eggs, oil and sugars. Add dry ingredients; mix lightly until well blended.
- Add zucchini, bananas, nuts and vanilla; mix well.
- Spread into 2 greased loaf pans (9 x 5 x 3-inch) and bake for 1 hour and 15 minutes, or 3 greased loaf pans (7 7/8 x 3 7/8 x 2 1/2-inch) for 1 hour.
- Bake at 350u0b0 (or 325u0b0 if glass pans).
