Refrigerator Yeast Rolls
- 2 pkg. yeast
- 1 c. cold water
- 1/4 c. shortening or oil
- 1/2 c. sugar
- 2 eggs, beaten or Egg Beaters
- 1 c. boiling water
- 3 c. whole wheat flour
- 3 to 4 c. white flour
- 1 1/2 tsp. salt
- Pour cold water over yeast and 1 tablespoon sugar and let stand to soften.
- Combine shortening/oil and sugar; add eggs. Beat well and add boiling water and 2 cups whole wheat flour.
- Add yeast, making sure boiling water mixture has cooled down sufficiently.
- Mix and add remainder of flour and salt gradually. Cover and refrigerate.
- When ready to use, punch down dough; knead lightly.
- Shape into balls and place in lightly greased pan. Let rise until double in size.
- Bake in preheated 375u0b0 oven for 18 to 22 minutes.
- Yield:
- 3 dozen.
