Chocolate Chip Oatmeal Cookies
- 1-1/2 c. sifted flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 c. shortening
- 3/4 c. brown sugar, packed
- 3/4 c. granulated sugar
- 2 eggs
- 1 Tbsp. hot water
- 1 tsp. vanilla extract
- 1 c. broken pecan meats
- 1 (6 oz.) pkg. chocolate chips
- 2 c. oatmeal
- Sift together flour, baking soda, and salt and set aside. Cream shortening until soft.
- Add sugars and beat.
- Add eggs one at a time, beating until fluffy.
- Add hot water and vanilla.
- Add flour mixture.
- Beat until flour disappears.
- Add nuts, chocolate chips, and oatmeal.
- Mix well.
- Drop from teaspoon onto ungreased cookie sheet.
- Bake 375 degrees for 8-10 minutes.
- Makes 8 dozen.
