Gourmet Chicken
- 1/2 stick butter
- 1 1/4 c. brown rice
- 1/2 c. slivered almonds
- 10 pieces chicken (breasts preferred)
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 1 can onion soup
- 1 can beef consomme
- 1 soup can water
- 1/2 c. cooking sherry
- 2 oz. Parmesan cheese
- Melt butter in large roasting pan.
- Spread brown rice in bottom of pan.
- Stir in slivered almonds.
- Lay chicken pieces on rice.
- Heat soups and water separately; add sherry to hot soup mixture.
- Pour mixture over chicken.
- Sprinkle Parmesan cheese on top.
- Bake uncovered for 3 hours at 275u0b0.
- Yields 10 servings.
