Rhubarb-Rose Lemonade

  1. Zest 2 of the lemons, then juice all 3 into a 1 gallon glass jar.
  2. Add chilled rhubarb-rose simple syrup. Add the bottle of sparkling water, then fill up the rest of the jar with cold tap water.
  3. Stir, then refrigerate until ready to serve. Garnish with a lemon twist.
  4. Remove rhubarb leaves. Wash and cut into 1-inch pieces.
  5. In a medium saucepan, add rhubarb, water, sugar, and rose water. Bring to a boil, reduce the heat, and simmer, stirring occasionally, until sugar has dissolved, approximately 10 minutes. Remove from heat and allow rhubarb to steep for 2 hours. Strain before using.
