Millionaire Salad
- 1 (14 oz.) can artichoke hearts, quartered
- 1 (14 oz.) can hearts of palm, sliced into 1/4-inch pieces
- 1 (14 oz.) jar pitted ripe olives, sliced
- 2 oz. roasted red peppers (packed in oil), diced
- 8 oz. fresh mushrooms, sliced
- 1 clove garlic, minced
- 1/4 tsp. pepper
- 1/2 tsp. thyme
- 1/4 c. red wine vinegar
- 1 tsp. salt
- 1/4 c. parsley, chopped
- 2/3 c. vegetable oil
- Drain artichoke hearts, hearts of palm, olives, pimentos and red peppers.
- Place with sliced mushrooms in a large glass container with lid.
- Combine other ingredients.
- Marinate vegetables in oil mixture overnight.
- Remove veggies from marinade with slotted spoon.
- Serve chilled in lettuce-lined bowl.
