Spinach Lasagna
- 1 pkg. spaghetti sauce mix
- 1 (6 oz.) can tomato paste
- 1 (8 oz.) can tomato sauce
- 1 3/4 c. water
- 2 eggs, beaten
- 1 (16 oz.) cottage cheese
- 1/2 tsp. salt
- 1 (10 oz.) pkg. chopped up spinach, thawed and drained
- 1/2 c. grated Parmesan cheese
- 1 (8 oz.) pkg. uncooked lasagna noodles
- 1 (8 oz.) pkg. sliced Mozzarella cheese
- Combine mix, paste, sauce and water; heat until boiling. Remove from heat.
- Combine eggs, cottage cheese, salt, spinach and 1/4 cup Parmesan cheese.
- Mix well and set aside.
- Spread 1/2 cup tomato sauce mixture in greased 9 x 13-inch dish.
- Place 1/2 of noodles over sauce, 1/2 of spinach mixture and 1/2 of Mozzarella. Repeat layers until all ingredients are used.
- Sprinkle with remaining Parmesan cheese.
- Cover dish securely with aluminum foil and bake at 350u0b0 for 1 hour.
- Let stand 10 minutes before serving. Makes 8 to 10 portions.
- May be put together the night before and put in refrigerator.
