Manicotti Casserole
- 1 (16 oz.) bag large shell noodles
- 1 (15 oz.) container Frigo Ricotta cheese
- 2 eggs
- 1 (30 oz.) jar plain spaghetti sauce
- 1 lb. grated Mozzarella cheese
- 1 bunch chopped parsley
- 1 (10 oz.) pkg. frozen peas
- 1 lb. hamburger, cooked and crumbled (optional)
- 1/2 c. grated Parmesan cheese
- 1 can chopped olives
- Boil noodles and drain.
- Beat eggs, Ricotta cheese and parsley.
- Cook and crumble hamburger; drain off grease.
- Cook peas.
- Mix eggs and Ricotta cheese mixture into noodles and add 2/3 spaghetti sauce.
- Add Mozzarella cheese, cooked peas and cooked hamburger.
- Put into a large casserole dish; top with remainder of sauce, Parmesan cheese and olives.
- Cover.
- Bake for 1/2 hour at 350u0b0.
