Mexican Corn Bread And Beef

  1. Cook and drain beef.
  2. Mix 1 cup cornmeal and soda in a bowl; add the eggs, milk, salt, corn and bacon drippings; mix well. Place remaining cornmeal in a greased skillet and brown.
  3. Pour 1/2 the corn bread mix into skillet and add beef; sprinkle with peppers, cheese and onion.
  4. Pour remaining corn bread mix over onions.
  5. Bake at 350u0b0 for 45 minutes or until done.
  6. (This takes at least a 10-inch skillet or can be placed in a 9 x 13-inch baking dish to bake.)
  7. Makes 6 to 8 servings.
  8. Add a salad and dinner is ready.
