Lois' Honey Whole Wheat Loaves
- 1 c. milk
- 1/2 stick oleo
- 2 Tbsp. sugar
- 1 tsp. salt
- 1/2 c. honey
- 2 pkg. yeast (equal to 5 level tsp.)
- 1 1/2 c. lukewarm water
- 2 1/2 c. sifted flour
- 5 c. whole wheat flour
- Scald milk; stir in oleo, honey, sugar and salt.
- Cool to lukewarm.
- Take bowl; add the 1 1/2 cups lukewarm water; sprinkle yeast over water.
- Stir to dissolve.
- Combine yeast with the milk mixture; add the white flour and 2 1/2 cups whole wheat flour. Mix until smooth with mixer or by hand; add rest of the whole wheat flour and work it until dough leaves sides of bowl.
- Turn it out on board and let it rest 10 minutes.
- Place in buttered bowl. Turn; cover with damp towel and let rise until double in size, about 1 1/2 hours.
- Punch down.
