Lois' Honey Whole Wheat Loaves

  1. Scald milk; stir in oleo, honey, sugar and salt.
  2. Cool to lukewarm.
  3. Take bowl; add the 1 1/2 cups lukewarm water; sprinkle yeast over water.
  4. Stir to dissolve.
  5. Combine yeast with the milk mixture; add the white flour and 2 1/2 cups whole wheat flour. Mix until smooth with mixer or by hand; add rest of the whole wheat flour and work it until dough leaves sides of bowl.
  6. Turn it out on board and let it rest 10 minutes.
  7. Place in buttered bowl. Turn; cover with damp towel and let rise until double in size, about 1 1/2 hours.
  8. Punch down.
