Flounder Fillet Florentine
- 2 pkg. frozen leaf spinach
- 1 1/2 lb. flounder fillets
- 1/2 c. water
- 2 Tbsp. lemon juice
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. skim milk
- 1 1/2 Tbsp. flour
- 1/4 c. Parmesan cheese
- Cook spinach; drain well.
- Fold flounder in small bundles. Arrange in shallow 6-cup baking dish.
- Pour over water and lemon juice; sprinkle with salt and pepper.
- Cover tightly.
- Bake at 350u0b0 for 15 minutes, or until fish flakes easily.
- Remove from oven; drain cooking liquid into measuring cup (should be 3/4 cup). Heat in saucepan.
- Combine milk and flour; mix well.
- Cook over moderate heat, stirring constantly, until thickened.
- Spread drained spinach around fish; pour sauce over and top with cheese. Bake at 425u0b0 until sauce bubbles.
