Flounder Fillet Florentine

  1. Cook spinach; drain well.
  2. Fold flounder in small bundles. Arrange in shallow 6-cup baking dish.
  3. Pour over water and lemon juice; sprinkle with salt and pepper.
  4. Cover tightly.
  5. Bake at 350u0b0 for 15 minutes, or until fish flakes easily.
  6. Remove from oven; drain cooking liquid into measuring cup (should be 3/4 cup). Heat in saucepan.
  7. Combine milk and flour; mix well.
  8. Cook over moderate heat, stirring constantly, until thickened.
  9. Spread drained spinach around fish; pour sauce over and top with cheese. Bake at 425u0b0 until sauce bubbles.
