Ma'S Bran Muffins
- 4 c. All-Bran cereal
- 1 c. boiling water
- 1/2 c. cooking oil
- 2 1/2 tsp. baking soda
- 2 eggs, beaten
- 1 c. sugar
- 2 1/2 c. flour
- 1 tsp. salt
- 2 c. buttermilk
- raisins (optional; you can add, if desired)
- Pour boiling water over 1 cup of bran cereal and let stand. Mix sugar, oil and eggs and alternate with buttermilk and sifted dry ingredients.
- First, add bran mixture, then remaining bran. Cover tightly and store in refrigerator for a minimum of 12 hours or a maximum of 6 weeks.
- Preheat oven to 400u0b0 and let mixture thaw (approximately 25 minutes).
- Grease muffin tins and spoon mixture into tins full 2/3 full.
- Bake for 18 minutes.
- For smaller muffins, bake for 20 to 25 minutes.
- Makes 24 muffins, depending on size.
- Great for breakfast!
