Minestrone With Tortellini
- 1 1/2 lb. Italian sausage (casings removed)
- 1 c. chopped onion
- 6 c. beef broth
- 1/2 c. dry red wine
- 1 lb. can tomatoes
- 2 c. sliced carrots
- 1 c. celery, thinly sliced
- 1 c. ketchup
- 1 tsp. Italian seasoning
- 2 cloves sliced garlic
- 2 c. zucchini
- 1/2 lb. frozen cheese tortellini
- 1 medium green pepper, chopped
- 1/4 c. chopped fresh parsley
- grated Romano cheese
- 1/2 tsp. garlic powder
- Break sausage into small pieces.
- Cook in large pot over medium heat.
- Remove and drain.
- In same pot, saute onions until tender.
- Add garlic powder, beef broth, wine, tomatoes, carrots, celery, ketchup and Italian seasoning.
- Bring to boil and simmer, uncovered, for 30 minutes.
- Skim fat.
- Stir in rest of ingredients.
- Simmer, covered, for 35 to 40 minutes until tortellini is tender.
