Beef Salad Stir-Fry

  1. Combine lime juice, sugar, soy sauce, basil and mint; set aside.
  2. In a medium nonstick skillet, coated with nonstick cooking spray, saute jalapeno, garlic and ginger for 30 seconds.
  3. Add beef slices; stir-fry until desired doneness.
  4. Remove from heat; add red peppers and cucumber and toss gently.
  5. Place greens on serving platter and top with beef mixture.
  6. Add dressing to a pan and bring to a boil, then drizzle over beef.
