Beef Salad Stir-Fry
- 1/3 c. lime juice
- 1 Tbsp. brown sugar
- 1 Tbsp. soy sauce
- 1 tsp. dried basil
- 3/4 tsp. dried mint
- 1 jalapeno pepper, minced
- 2 garlic cloves, minced
- 1/4 tsp. ground ginger
- 1/2 lb. boneless sirloin steak, thinly sliced
- 1 large sweet red pepper, chopped fine
- 1/2 medium cucumber, chopped
- 6 c. torn mixed salad greens
- Combine lime juice, sugar, soy sauce, basil and mint; set aside.
- In a medium nonstick skillet, coated with nonstick cooking spray, saute jalapeno, garlic and ginger for 30 seconds.
- Add beef slices; stir-fry until desired doneness.
- Remove from heat; add red peppers and cucumber and toss gently.
- Place greens on serving platter and top with beef mixture.
- Add dressing to a pan and bring to a boil, then drizzle over beef.
