Cherry Olive Oil Clafoutis
- 2 cups flour
- 1 1/4 cups milk of your choice (I used almond, don't @ me)
- 2 cups whole pitted dark cherries
- 1 3/4 cups sugar
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/3 cups olive oil
- 3 large eggs
- 2 tablespoons orange zest
- 1/4 cup orange juice
- 1/4 cup Cointreau
- Leaving the cherries aside, mix together all dry ingredients.
- In a different bowl, mix together all wet ingredients.
- Slowly and carefully combine the wet and dry ingredients.
- In a buttered pan that is at least 2 inches deep, cover the entire bottom with cherries.
- Slowly pour in all of the combined cake batter to cover the cherries.
- Place in the oven at 325F for a little over an hour.
- Let cool for at least 30 minutes before slicing and serving.
