Fajita Chicken Fingers
- 1 pkg. mahatma saffron yellow rice
- 8 to 10 chicken strips
- 1/2 chopped onion (not diced)
- fajita seasoning
- 2 fresh tomatoes, chopped
- Cook rice according to directions on package.
- Spray skillet with Pam cooking spray or heat 3 tablespoons cooking oil in skillet on medium heat.
- Sprinkle chicken strips heavily with fajita seasoning and fry in the skillet until lightly browned. Place onion on top of chicken fingers and put a lid on the skillet.
- When onion is tender (not soft), remove lid and turn over chicken fingers.
- Place tomatoes on top.
- Replace the lid on the skillet until tomatoes are slightly soft.
- The fajita seasoning sometimes makes the chicken appear blackened.
- This is okay.
- Place rice on plates and put chicken, onion and tomatoes on top.
