Fajita Chicken Fingers

  1. Cook rice according to directions on package.
  2. Spray skillet with Pam cooking spray or heat 3 tablespoons cooking oil in skillet on medium heat.
  3. Sprinkle chicken strips heavily with fajita seasoning and fry in the skillet until lightly browned. Place onion on top of chicken fingers and put a lid on the skillet.
  4. When onion is tender (not soft), remove lid and turn over chicken fingers.
  5. Place tomatoes on top.
  6. Replace the lid on the skillet until tomatoes are slightly soft.
  7. The fajita seasoning sometimes makes the chicken appear blackened.
  8. This is okay.
  9. Place rice on plates and put chicken, onion and tomatoes on top.
