Lo-Cal Blueberry Cottage Cheese Mold

  1. Dissolve gelatins in boiling water.
  2. Cool.
  3. Coat bottom of 6-cup mold with gelatin using a pastry brush or spoon.
  4. Let set slightly.
  5. Arrange 1/2 cup blueberries decoratively in gelatin layer.
  6. Chill until firm.
  7. Pour another thin layer of gelatin and let set.
  8. Add blueberries, cottage cheese and yogurt to rest of gelatin and blend thoroughly.
  9. Spoon mixture over gelatin layer in mold and chill until firm.
  10. Unmold on salad greens and serve with mayonnaise thinned with cranberry juice.
