Stir-Fried Orange Beef Or Chicken
- 1 (1 1/4 lb.) top round steak, trimmed, or chicken breast meat, deboned and cut
- 2 Tbsp. plus 1 tsp. cornstarch
- 2 tsp. brown sugar
- 1 Tbsp. sesame oil
- 1 tsp. finely minced ginger root
- 3 Tbsp. chopped fresh cilantro
- 1 can sliced water chestnuts, rinsed and drained
- 2 oranges
- 1/2 c. orange juice
- 2 Tbsp. soy sauce
- 1/2 c. chicken broth
- 1 garlic clove, minced
- 4 c. broccoli tops
- 4 green onions
- With paring knife or zester, remove peel from oranges in thin strips; set aside.
- Section peeled oranges; set aside.
- With sharp knife, cut steak into 2-inch wide strips or chicken into 2-inch squares.
- In shallow dish, combine meat, 2 tablespoons orange juice, soy sauce, 1 tablespoon cornstarch and 1 teaspoon brown sugar.
- Stir to combine; set aside.
