Fizzy Fruity Refresher

  1. Place fruit, mint and sugar in large bowl or jug and macerate until the sugar begins to dissolve and a thick syrup starts to form.
  2. Pour hot water over fruit, mint and sugar and stir till the sugar is completely dissolved.
  3. Let fruit, mint and sugar steep together till solution has cooled.
  4. Strain into a pitcher, pressing into the fruit with the back of a spoon so that you get as much juice as possible into the pitcher. If pieces of fruit have fallen into the pitcher, strain it again so that you have a pure syrup. (Great for sweetening iced tea, by the way.)
  5. Refrigerate syrup.
  6. Pour sparkling water into large glass over crushed ice (if desired).
  7. Squeeze juice of lemon or lime into glass.
  8. Add 2-4 ounces of syrup--varying to taste for sweetness.
  9. Garnish with fruit or a sprig of mint.
  10. Ahhhhh......
