Corn Dog Bites
- 1 c. all-purpose flour
- 2/3 c. cornmeal
- 1 Tbsp. sugar
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 2 Tbsp. bacon drippings
- 1 egg, beaten
- 1 to 1 1/4 c. buttermilk
- 1/2 tsp. baking soda
- 1 lb. frankfurters
- vegetable oil
- mustard, catsup, picante sauce (optional)
- Combine first 5 ingredients; stir in bacon drippings.
- Combine eggs, buttermilk, and soda, mix well.
- Stir into flour mixture, mixing well.
- Cut each frankfurter into 10 pieces.
- Dip each piece into the batter covering completely (wooden picks work well for dipping).
- Drop into 3 or 4-inch deep hot oil and cook until golden, turning once.
- Drain on paper towels.
- Insert party pick and serve immediately with mustard, catsup or picante sauce. Makes about 10 servings.
- To make corn dogs leave frankfurters whole and insert wooden skewers.
