Holiday Fruit Drops
- 1/2 c. butter, softened
- 3/4 c. packed brown sugar
- 1 egg
- 1 1/4 c. all-purpose flour
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
- pinch of salt
- 1 c. (8 oz.) diced candied pineapple
- 1 c. (8 oz.) red and green candied cherries
- 8 oz. chopped dates
- 1 c. semi-sweet chocolate chips
- 1/2 c. whole hazelnuts
- 1/2 c. pecan halves
- 1/2 c. chopped walnuts
- Preheat oven to 325u0b0.
- Lightly grease cookie sheets or line with parchment paper.
- Cream butter and sugar in large bowl.
- Beat in egg until light.
- Mix in flour, vanilla, baking soda, cinnamon and salt.
- Stir in fruit, nuts and chips.
- Drop dough by rounded teaspoonfuls 2-inches apart onto prepared cookie sheets.
- Bake 15 to 20 minutes or until firm and lightly brown around edges.
- Remove to wire racks to cool.
- Makes 8 dozen.
