Granola With Pecans, Cashews, And Cherries
- 3 cups rolled oats
- 3/4 cup pecans, roughly chopped
- 3/4 cup cashews, roughly chopped
- 1/2 cup pepitas
- 1 cup unsweetened coconut flakes
- 1/3 cup packed light brown sugar
- 1/3 cup honey
- 1/3 cup extra-virgin olive oil
- 2 teaspoons flaky sea salt
- 1 1/2 cups dried cherries
- Preheat oven to 300u0b0F. In a large bowl, combine oats, nuts, pepitas, and coconut. In a small saucepan, combine sugar, honey, oil, and salt over medium heat, stirring until sugar dissolves. Bring to a simmer, then pour over oat mixture; stir until evenly combined. Spread onto a parchment-lined rimmed baking sheet.
- Bake, stirring a few times, until golden and crisp, about 45 minutes. Let cool completely, then stir in cherries. Store in an airtight container at room temperature for up to 2 weeks or in the freezer for up to 3 months.
