Kentucky Spice Cookies
- 3 1/2 c. sugar
- 1 c. shortening
- 1 1/2 tsp. cinnamon
- 3/4 tsp. cloves
- 3/4 tsp. ginger
- 3/4 tsp. allspice
- 2 tsp. salt
- 2 Tbsp. baking soda
- 1 c. dark molasses
- 5 c. flour
- 1/2 c. water
- sugar
- strawberry or raspberry jelly
- Preheat oven to 350u0b0.
- Cream together 3 1/2 cups sugar, shortening, spices, salt and baking soda.
- Add the molasses and blend well.
- Gradually mix in the flour.
- Then add the water to make a dough of pie crust consistency.
- For each cookie, take 1 teaspoon of dough and roll it into a ball, then roll the ball in sugar.
- Place each on ungreased cookie sheet, make a small indentation in the top of each ball and fill with a dot of jelly. Bake for 8 minutes.
- Remove from oven and immediately sprinkle with sugar.
- Cool before storing.
