Great Pumpkin Cookie Recipe

  1. Preheat oven to 350u0b0.
  2. Combine flour, oats, soda, cinnamon and salt.
  3. Cream butter, gradually add sugars, beat until light and fluffy.
  4. Add egg and vanilla; mix well.
  5. Alternate additions of dry ingredients and pumpkin; mix well after each addition.
  6. Stir in morsels.
  7. For each cookie drop 1/4 cup dough onto lightly greased cookie sheet, spread into pumpkin shape, using a thin metal spatula.
  8. Add a bit more dough to form stem.
  9. Bake 20 to 25 minutes until cookies are firm and lightly brown.
  10. Remove from cookie sheets; cool on racks.
  11. Decorate, using icing or peanut butter to affix assorted candies, raisins or nuts.
  12. Yields 19 to 20 cookies.
