Black Bottom Pie
- 1 (9-inch) pie crust (baked or crumb)
- 1 Tbsp. gelatin in 1/4 c. cold water
- 2 c. rich milk (half and half)
- 4 eggs, separated
- 1/2 c. sugar
- 4 tsp. cornstarch
- 1 1/2 oz. melted unsweetened chocolate
- 1/2 tsp. vanilla
- 1 Tbsp. rum or rum flavoring
- 1/4 tsp. salt
- 1/2 tsp. cream of tartar
- 1/4 c. sugar
- 1 c. heavy whipping cream
- 2 Tbsp. powdered sugar
- Soak gelatin in cold water.
- Scald milk.
- Combine sugar and cornstarch.
- Beat egg
- yolks
- until
- light.
- Stir
- scalded milk into egg yolks.
- Using a whisk, slowly add sugar mixture. Cook in double boiler,
- stirring
- until
- mixture heavily coats spoon, approximately 20 minutes.
- Remove 1 cup custard and add melted chocolate.
- Add vanilla.
- Pour into pie crust.
