Broccoli Crab Bisque(Serves 6 To 8)

  1. In a 3-quart saucepan, cook leeks, mushrooms, broccoli and garlic in butter until crisp-tender.
  2. Blend in flour, thyme (1/8 teaspoon salt, optional), pepper and bay leaf.
  3. Add chicken broth and cream all at once.
  4. Cook and stir until thickened and bubbly. Cook and stir 1 minute more.
  5. Add cheese.
  6. Stir until cheese is melted.
  7. Add crabmeat; heat through.
