My Mom'S Caramel Popcorn
- 4 to 6 c. popcorn or 1 bag microwave popcorn (remove all unpopped kernels)
- 1/4 c. light corn syrup
- 1 stick butter or margarine
- 1 c. brown sugar
- 1/4 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. vanilla
- Mix the corn syrup, margarine and brown sugar together and bring to a rolling boil.
- Boil for 1 full minute.
- Remove mixture from heat.
- Stir the salt, baking soda and vanilla into the mixture.
- Mix all ingredients thoroughly.
- Spread popcorn into a greased roasting pan.
- Pour caramel mixture over top of popcorn. Toss popcorn until completely coated with caramel mixture. Bake for 45 minutes in preheated 250u0b0 oven.
- Halfway through cooking time, toss popcorn mixture.
- Remove from oven when done.
- Let cool in pan or spread in clumps on lightly greased waxed paper.
