Poor Man'S Goulash
- 1 pound garlic coil - cut into cubes (1/8 inch)
- 2 pounds potatoes - Yukon Gold are similar - cut into cubes (1/2 inch)
- 1/2 pound onions - chopped (1/2 inch cubes)
- 2 quarts water
- 1 tablespoon sweet parika
- 1 tablespoon tomato puree - optional
- 4 pieces cucumber pickles - medium size - chopped finely
- salt and pepper to taste
- 1 tablespoon oil or lard
- 1 teaspoon crushed garlic - or more;-)
- 2 leaves of laurel
- Fry onions in the oil until they start to brown.
- Add the sausage, potatoes, tomato puree (if used), and paprika and fry for about two minutes.
- Add the water, laurel, salt, and pepper - stir.
- Bring to a boil, cover, and simmer for about 45 minutes.
- Before serving add the pickled cucumbers and the garlic.
- Serve with crispy white roll or baguette.
- Remember: this dish gets better by the day. So make enough to keep some and re-heat it in a day or two.
