Microwave Shrimp Creole
- 2 Tbsp. butter
- 5 green onions, sliced
- 1/2 c. chopped green pepper
- 1 clove garlic, finely chopped
- 1 can (16 oz.) whole tomatoes
- 1 can (6 oz.) tomato paste
- 1 tsp. salt
- 1 tsp. sugar
- 2 tsp. dried parsley flakes
- 2 tsp. Worcestershire sauce
- 1/4 tsp. hot pepper sauce
- 1 pkg. (10 oz.) frozen cooked shrimp
- Place butter, onions, green pepper and garlic in 2-quart glass casserole.
- Microwave for about 3 minutes on High or until vegetables are partly cooked.
- Stir in remaining ingredients. Cover with glass lid.
- Microwave for 5 minutes on reheat (80% power).
- Stir, recover and continue cooking for 7 to 11 minutes on reheat (80% power).
- Let stand, covered, for 5 minutes before serving.
- Serve over hot rice.
