Honey Apricot Poached Pears
- 2 Whole Peeled Pears (I choose Bartlett)
- 1 cup White Wine
- 2 cups Water
- 3 tablespoons Honey
- 2 tablespoons Apricot Preserves
- 2 Sprigs of Thyme (optional)
- Combine all your ingredients, minus the pears, in a saucepan and bring to a rolling boil.
- Turn down the heat so that its still bubbling slightly and submerge the pears. Its okay if they don't submerge fully, just give them a turn every 5min minutes. Let the Pears poach for 12-15min, depending how soft they were to begin with, you want them whole at the end.
- Once the Pears are soft to your liking, remove and let cool. While the Pears cool, bring the remaining liquid back up to a boil and cook it down until its nice and syrupy like warm honey.
- Remove the Thyme sprigs and just before plating your Pears, baste them in the syrup. Plate these on a cutting board with a variety of cheeses, from brie to goats cheese and some crusty bread and don't forget the wine! enjoy!
