Cream Puffs

  1. Preheat oven to 400u0b0.
  2. In large saucepan, combine water with butter and salt.
  3. Heat over medium heat, until butter melts and water boils.
  4. Turn heat low; add flour all at once and beat mixture thoroughly with a wooden spoon until it leaves the sides of the pan in a smooth compact ball.
  5. Immediately remove pan from heat.
  6. With a wooden spoon or portable mixer at medium speed, beat in eggs, one at a time, beating until smooth after each egg.
  7. When all eggs are blended, beat dough until very smooth and satiny.
