Spinach Lasagna
- 8 oz. shredded Cheddar cheese
- 8 oz. Mozzarella cheese
- 4 oz. Parmesan cheese
- 8 oz. Ricotta cheese
- 3 eggs
- 4 tsp. chopped basil
- 1 pkg. lasagna pasta
- 3 pkg. spinach
- 1 can sliced mushrooms
- 2 chopped tomatoes
- 2 small cans tomato sauce
- small clove garlic
- salt and pepper to taste
- Mix spinach, mushrooms, tomatoes, tomato sauce, garlic, salt and pepper together.
- Cook lasagna noodles per package instructions.
- Drain and lay on waxed paper.
- Mix together cheeses, eggs and basil.
- Put thin layer of sauce in bottom of pan.
- Layer lasagna noodles.
- Top with spinach and cheese mixture. Keep layering and end layering with lasagna noodles.
- Top with shredded Mozzarella cheese.
- Bake at 350u0b0 for 30 minutes.
