Sausage Cornbread
- 1 lb. bulk pork sausage
- 1 c. chopped onion
- 1/3 c. green pepper, chopped
- 2 Tbsp. flour
- 1 (6 oz.) can tomato paste
- 1 tsp. salt
- 1 tsp. chili powder
- 1/8 tsp. pepper
- 4 oz. Cheddar cheese in 1/2-inch cubes
- 1/2 c. sliced olives
- 2 (8 1/2 oz.) pkg. corn muffin mix
- Preheat oven to 400u0b0.
- Cook sausage, onion and pepper in a skillet until sausage is brown and crumbly.
- Stir in flour.
- Mix in next 4 ingredients.
- Remove from heat.
- Stir in cheese and olives.
- Spread evenly in 9-inch square pan.
- Prepare corn muffin mix according to directions and spread over sausage.
- Bake 30 to 35 minutes.
- Let stand 5 minutes; loosen edges.
- Invert onto plate.
