High Energy Bars

  1. Preheat oven to 375
  2. Coarse chop the nuts in a food processor. Remove half of them. Fine chop the rest until they resemble small crumbs or even a nut butter.
  3. Mix all dry ingredients thoroughly.
  4. (A note about dates in a paste: You can get away here with pitting the dates, chopping them fine and adding them. Since these bars are a regular staple, I use a meat grinder to make a big batch of date paste. This can also be used for date squares.)
  5. Mix the wet ingredients minus the egg whites
  6. Heat oil and honey in a microwave until warm to help them combine better.
  7. Add in any extras - currants, mango, coconut, chocolate. Laying them in rows will give you different varieties of bars. Gently spread the rest of the mix over, using the oiled spoon technique.
  8. Let it cool, and gently lift out the bars.
