One Pot Pasta
- 4 cloves garlic, sliced thin
- 2 tablespoons olive oil
- 8 ounces box of banza chick pea linguini pasta
- 4 cups vegetable broth
- 12 ounces sweet cherry tomatoes, halved
- 8 ounces mushrooms, sliced
- 1 bunch broccoli Rabe, chopped, thick stems removed
- Pinch chili flakes
- 1 teaspoon salt or more to taste
- 1/2 lemon, juice
- Handful parmesan cheese
- Heat 2 Tbs olive oil in a large straight-sided skillet over medium-high heat. Add the garlic and chili flakes and cook just until the garlic starts to brown.
- Add the pasta and use your hands to roll it around the oil until its lightly coated with the oil.
- Add the broth, tomatoes, mushrooms, rabe, salt. Bring the broth to a boil all the while turning and tossing the pasta to keep it from sticking together. Cook for 8 to 10 minutes or until the pasta is cooked.
- remove from heat and stir in the juice from 1/2 a lemon and a handful of parmesan cheese.
