Mexican Fiesta Casserole
- 1 1/2 lb. ground beef
- 3/4 c. chopped onion
- 2 cloves garlic
- 1 tsp. chili
- 2 tsp. cumin
- 1 tsp. salt
- 2 tsp. sugar
- 1 tsp. oregano
- 2 (15 oz.) cans tomato sauce
- 3/4 to 1 1/2 c. water
- 1 1/2 c. cooked rice
- lettuce
- tomatoes
- onion
- black olives
- avocado
- sour cream
- hot sauce
- shredded cheese
- Doritos
- Brown ground beef and onion.
- Drain grease.
- Stir in garlic, chili, cumin, salt, sugar, oregano, tomato sauce and water.
- Cook, uncovered, 30 minutes.
- Add cooked rice.
- Simmer 15 minutes. Garnish with lettuce, tomatoes, onion, black olives, avocado, sour cream, hot sauce, shredded cheese and Doritos.
- Serves 8.
