Liver Pate
- 2 Tbsp. butter
- 3 Tbsp. chopped onion
- 1 lb. chicken liver
- 2 Tbsp. mayonnaise
- 2 Tbsp. lemon juice
- 8 drops hot pepper sauce
- 1/2 tsp. salt
- 1/2 tsp. dry mustard
- dash of pepper
- chopped hard-boiled eggs
- chives
- snipped parsley
- tomatoes, peeled and cored
- 1 1/2 c. chopped green pepper
- 1 1/2 c. chopped onion
- 1 c. chopped jalapeno pepper
- 6 tsp. cumin powder
- 2 tsp. ground red pepper
- 2 Tbsp. sugar
- 2 Tbsp. salt
- Mix together and boil 10 minutes.
- Put in pint or 1/2 pint jars.
- If mixture is hot, jars will seal.
- If you get a lot of juice, strain and put in separate jar.
- Makes good Bloody Mary mix.
- Makes 5 quarts.
