Oatmeal-Chocolate Chip Cake
- 1 3/4 c. boiling water
- 1 c. uncooked rolled oats
- 1 c. packed brown sugar
- 1 c. sugar
- 1/2 c. margarine
- 2 eggs
- 1 3/4 c. flour
- 1 tsp. soda
- 1/2 tsp. salt
- 1 Tbsp. unsweetened cocoa
- 12 oz. semi-sweet chocolate chips
- Grease and flour a 13 x 9 x 2-inch pan and preheat oven to 350u0b0.
- Pour boiling water over oats and let stand for 10 minutes. Add sugars and margarine to oats.
- Stir until margarine melts.
- Add eggs and mix well.
- Add flour, soda, salt and cocoa to oat mixture. Add half the chocolate chips.
- Stir (do not user mixer).
- Pour into prepared pan.
- Sprinkle remaining chocolate chips over top of cake. Bake 30 to 40 minutes or until cake tests done with toothpick.
