Hummingbird Cake

  1. Sift dry ingredients together into a large bowl; make well in center.
  2. Beat eggs slightly and add with other "wet" ingredients. Do not beat, just stir well, adding coconut and nuts last.
  3. Spoon into well-greased and floured tube pan and bake at 300u0b0 for about 1 hour and 15 minutes, until top is nicely browned.
  4. Cool in pan at least 15 minutes before removing.
  5. This cake needs no icing and remains moist for as long as it lasts which isn't usually very long!
