Microwave Turkey Meat Loaf
- 2 lb. ground turkey
- 1 box frozen chopped spinach, thawed and squeezed dry
- 3/4 c. chicken broth
- 3/4 c. uncooked quick oats
- 1 c. shredded carrots
- 1 c. sliced scallions
- whites from 2 large eggs
- 2 Tbsp. poultry seasoning
- 1 1/2 tsp. salt
- Mix all ingredients in a large bowl with hands or spoon until blended.
- Place a 4-ounce glass custard cup, right side up, in the center of a 9-inch deep dish microwave-safe pie plate.
- Place turkey mixture in a ring around custard cup.
- Loosely cover turkey mixture with waxed paper.
- Microwave on High 12 to 15 minutes, rotating dish 1/4 turn every 4 minutes, until meat is opaque at center, no longer pink and thermometer registers 160u0b0.
- Remove from oven and let stand 5 minutes to finish cooking.
