Peaches 'N Cream Cake
- 3/4 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 pkg. vanilla pudding (not instant)
- 3 Tbsp. butter
- 1 egg
- 1/2 c. milk
- 8 oz. cream cheese, softened
- 1/4 c. honey
- 3 Tbsp. orange juice
- 1 Tbsp. sugar
- 1 1/2 tsp. cinnamon
- 4 or 5 peaches, peeled and sliced
- Combine flour, baking powder, salt, pudding mix, butter, egg and milk and beat for 2 minutes with electric mixer.
- Grease a 10-inch pie plate.
- Pour batter into dish, spreading evenly.
- Place peach slices over the top of batter.
- Combine cream cheese, honey and orange juice and beat well.
- Spread topping over peaches to within 1 inch of the edge of the baking dish.
- Mix 1 tablespoon sugar with cinnamon and sprinkle over cake.
- Bake in preheated 325u0b0 oven for 45 to 50 minutes.
- Serve warm with whipped cream or vanilla ice cream.
