Sweet Potato Pie
- 3 medium size sweet potatoes, baked
- 1/4 c. brown sugar, packed
- 2 Tbsp. sugar
- 2 Tbsp. butter, softened
- 1 Tbsp. vanilla extract
- 1/4 tsp. salt
- 1 tsp. ground allspice
- 2 tsp. cinnamon
- 1 unbaked 9-inch pie shell fitted into 8-inch cake pan
- 3/4 c. sugar
- 3/4 c. dark corn syrup
- 2 eggs
- 1 1/2 Tbsp. butter, softened
- 2 tsp. vanilla extract
- 3/4 c. pecan pieces
- Peel and pulp sweet potatoes.
- Mix with next 7 ingredients. Spoon mixture into pastry prepared cake pan.
- With electric mixer, blend next 5 ingredients.
- Beat until smooth and syrupy.
- Stir in pecans.
- Pour this mixture atop sweet potato mixture.
- Bake at 325u0b0 for 1 1/2 hours until a knife inserted in middle comes out clean.
- Serve with whipped cream.
- Serves 12.
