Date Nut Pinwheels

  1. Combine dates, granulated sugar and water in a saucepan. Cook over low heat until thick, about 10 minutes.
  2. Cool, and then stir in nuts; set aside.
  3. Cream shortening.
  4. Add sugar gradually. Add eggs and beat well.
  5. Sift together flour, salt and soda; add and mix well.
  6. Chill thoroughly.
  7. Divide mixture in half and roll each section into a rectangle a little less than 1/4-inch thick. Spread date fillings to edges and roll up from long side like a jelly roll.
  8. Wrap rolls in waxed paper and chill overnight.
