Date Nut Pinwheels
- 2 1/4 c. chopped dates
- 1 c. granulated sugar
- 1 c. water
- 1 c. chopped pecans or walnuts
- 1 c. vegetable shortening
- 2 c. firmly packed brown sugar
- 3 eggs, well beaten
- 4 c. flour
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- Combine dates, granulated sugar and water in a saucepan. Cook over low heat until thick, about 10 minutes.
- Cool, and then stir in nuts; set aside.
- Cream shortening.
- Add sugar gradually. Add eggs and beat well.
- Sift together flour, salt and soda; add and mix well.
- Chill thoroughly.
- Divide mixture in half and roll each section into a rectangle a little less than 1/4-inch thick. Spread date fillings to edges and roll up from long side like a jelly roll.
- Wrap rolls in waxed paper and chill overnight.
